Another recipe using a delicious key ingredient from Protein2U turkey sausage! There is so much flavor in these, you don’t need to season them while browning – delicious!
Ingredients
2 tbsp extra virgin olive oil (1 tbsp each for sausage browning + 1 tbsp for remaining ingredients)
1 pkg (5) turkey sausages (remove from casings and combine well in bowl)
3 cups penne
3 spring onions sliced thinly (you can substitute one small onion diced)
1 yellow pepper diced
S&P
3 garlic cloves minced
1 large can (28oz) diced tomatoes (drained)
¼ cup sliced black olives
Pinch of garlic powder, onion powder and chili flakes
1 tsp dried basil
½ cup + 2 tbsp grated Parmesan cheese
1 large handful of chopped flat leaf parsley (basil would be a fantastic substitute)
Cooking
Heat 1 tbsp of oil on medium in large skillet. Heat a large pot of salted water for your penne.
Add the turkey sausage to the skillet, breaking apart with wooden spoon. While the turkey sausage browns, add your pasta to the pot and cook to desired texture.
Once turkey sausage is browned, spoon into bowl and set aside.
In same skillet add remaining oil, heat slightly and add onions and peppers. Season with S&P and keep stirring until soften, approximately 5 minutes. Add garlic and keep stirring for approximately 2 minutes. Add the diced tomatoes, olives, garlic powder, onion powder, chili flakes and basil. Stir well. Cook for 3-5 minutes. Give the sauce a taste and adjust seasonings based on your liking. Add the cooked turkey sausage and combine well. Reduce to simmer and cover for 3-5 minutes.
Drain your cooked penne and reserve 1 cup of pasta water.
Add penne to your sausage and sauce skillet and mix well. Add the ½ cup of the Parmesan cheese to skillet and combine well. If it’s too thick, add a some of the pasta water to loosen.
Remove from heat and sprinkle with parsley or basil and remaining Parmesan cheese.
